Catamaran RUBICON Crew Profile
CAPTAIN: ADAM DREFFIN
Adam Dreffin holds an MCA Master of Yachts 200 Tons. Adam was born in the Exumas aboard the boat of his parents, Peter and Tina Dreffin. At a young age, Adam disappeared into hidden coves with his brother, trolling for fish while handling a sailing dinghy, so he knows the Bahamas islands very well. He shot his first lobster at age 6. His passion for the islands is evident in his very presence.
Adam’s parents, along with his younger brother Warren, all set off for a world cruise on their sailing boat once the boys reached teenage years, so Adam is also very widely travelled to many exotic parts of the world. When they reached Australia the boys went to school and college there, whilst their parents continued their cruise back home to the Bahamas.
Summers during school, Adam captained catamarans for Broadreach Sailing School in the French West Indies with high school kids aboard. He’s also captained large yachts in New England and delivered vessels from the Mediterranean. He has run charters aboard Rubicon for several years in Exumas, Bahamas.
Adam’s specialty is as an avid sportsman on the water. He kite-surfs, windsurfs and relishes catching game fish while trolling between islands. He is also certified as a Sivananda yoga instructor.
The Dreffin family now has three catamarans in the Exumas, as the parents charter with one boat, Adam has Rubicon, and his younger brother has just added the third catamaran to the fleet…..so this family are true sailors with over 35 years experience at sea!
CHEF/HOSTESS JENNIFER ANNE AEMILIA ICEBERG
Jen grew up in her grandparents’ farmhouse with her brother and four cousins in New Rochelle, NY, a small waterfront community located on the WNW coast of Long Island Sound. Sharing and caring are instinctive in an extended family. This Kincaid-esque setting was naturally blessed with the freshest seafood and seasonal produce. Jen lives by the yogi adage: “Be good, do good, be kind, be compassionate.” This is in part why Jen receives such glowing testimonials. But it’s even more for her amazing cuisine.
Jen’s childhood was idyllic. She recalls, “At home my grandmother taught me to cook and garden at an early age, pursuits I still love to this day. Fruits, vegetables, herbs and plants are my passion, especially growing them. At school, I volunteered to help other kids a lot; team manager, field day coordinator and subject tutor. I found greater pleasure serving quietly than being in the spotlight, but I did win a trophy in a national billiards competition and a youth modeling competition.”
In addition to being kind-hearted and a natural beauty, Jen also achieved a Bachelor of Science in Hospitality Management, majoring in Culinary Arts and Restaurant Management. Education and talent was rewarded with cooking/management positions at several posh hotels. She specializes in vegan/GF/paleo/raw food and her most popular recipes include zucchini pasta with avocado alfredo sauce, conch fritters and burgers, red snapper, Mahi fish stew, gluten free protein pancakes, and “bullet coffee”. She is also a meditation, mantra, pranayama, dance/fitness, yoga and yoga therapy instructor with two 200-hr RYT certifications, and she is certified in adult and infant CPR.
Jen’s motto:” Life, love, laugh and be happy! Enjoy each moment just as it comes.” Which, she admits, is not a hard thing to do aboard Rubicon in the Exumas, Bahamas.
